Prof. Dr. Endang Sutriswati Rahayu, MS adalah salah satu pemenang RKSA 2018. Ia lahir di Yogyakarta, 22 Februari 1954, dan tinggal di Jl. Flora Bulaksumur, Yogyakarta. Beliau menyelesaikan pendidikan di S-1 jurusan Teknologi Pertanian di Universitas Gadjah Mada tahun 1979, S-2 jurusan Imu dan Teknologi Pangan di Universitas Gadjah Mada tahun 1985, dan S-3 jurusan Kimia Pertanian di Universitas Tokyo di tahun 1991.
Ia memiliki pengalaman penelitian dalam 5 tahun terakhir yaitu tahun 2012 meneliti Mapping jamur dan mikotoksin pada hasil pertanian kopi, kakao dan gaplek yang didanai oleh PHKI FTP UGM; Diversity of food-and air-borne fungi (in collaboration with CBS the Netherlands) yang didanai oleh CBS the Netherlands; ASIA Microbiome (organized by AFSLAB) yang didanai oleh AFSLAB; dan Recovery of Lactobacillus casei strain Shirota (LcS) from the Intestine of Healthy Indonesian Adults after Intake of Fermented Milk yang didanai oleh Yakult Honsha Japan. Tahun 2012-2017 meneliti Development of Internationally Standardized Microbial Resources Center (Research Topic: Biodiversity of Lactic Acid Bacteria) in collaboration with LIPI and NITE BRC, yang didanai oleh JICA Japan; Tahun 2013-2017 meneliti Pengembangan produk susu fermentasi probiotik dengan bakteri asam laktat indigenous yang didanai oleh Kementerian Riset dan Teknologi dan PT Yummy Food; dan Bakteri Asam Laktat sebagai Ingridient Pangan Fungsional dan Manfaatnya bagi Kesehatan Tubuh yang didanai oleh Kemenristekdikti (PUPT); Tahun 2014-sekarang sedang meneliti Evaluation of the effects of respiration inhibitors on aflatoxin contamination in postharvest peanuts yang didanai oleh Department of Applied Biological Chemistry Graduate School of Agricultural and Life Sciences, The University of Tokyo; Tahun 2015-2016 meneliti Pengembangan Teknologi Produksi Tahu yang Aman dan Awet: Studi Kasus di Pabrik Gama Tahu KP4 UGM yang didanai oleh Kemenristekdikti (PUPT); Tahun 2016-2018 meneliti Teknologi pengendalian kontaminan mikotoksin menggunakan bakteri asam laktat untuk meningkatkan mutu biji kakao yang didanai oleh Badan Penelitian Dan Pengembangan Pertanian (KP4S); Tahun 2016 juga meneliti The intestinal microbiota and intestinal environment in both elderly and young healthy people in Indonesia yang didanai oleh PT Yakult Honsha Japan; Tahun 2017-2018 meneliti Mikroenkapsulasi probiotik indigenous powder dan aplikasinya di bidang industri untuk mendukung kesehatan yang didanai oleh Kemenristekdikti melalui Penelitian Pengembangan Teknologi Industri (PPTI); Tahun 2018 meneliti The effects of a probiotic milk drink, Yakult®, containing Lactobacillus casei Shirota on the intestinal microbiota and intestinal environment in elderly healthy people in the Indonesia yang didanai oleh PT Yakult Honsha Japan; dan Tahun 2018-2022 juga meneliti Hubungan Pola Konsumsi dengan Gut Microbiota Orang Indonesia, serta Peranan Probiotik Indigenous pada Kesehatan Tubuh (Anggota).

Penelitian RKSA 2018 yang dilaksanakan oleh beliau telah menghasilkan luaran berupa publikasi jurnal internasional yang berjudul “Effect of probiotic Lactobacillus plantarum Dad-13 powder consumption on the gut microbiota and intestinal health of overweight adults” yang diterbitkan oleh World Journal Gastroenterology.
